I made some brownies today, cobbled together from two different recipes for which I should have kept the links… for the brownies, I googled “coca cola brownies” and the frosting came from Epicurious. They are wonderful.
- 1 box of brownie mix
- 1/2 cup of buttermilk
- 1/2 cup of Coke
- 2 Tablespoons of oil
- 1 egg
Preheat your oven to 350 degrees and grease the bottom of a 9 x 13 inch pan.
Mix the ingredients together, pour the batter in your pan, and bake for 25-30 minutes.
- 1 cup of creamy peanut butter
- 3 tablespoons of unsalted butter, room temperature
- 2/3 cup of powdered sugar
- 1 teaspoon of vanilla extract
I actually halved the above recipe for mine.
Combine peanut butter and butter in a bowl and beat until smooth. Add powdered sugar and vanilla (I added a little extra of both, and some honey), combine.
Frost the brownies after they’ve cooled completely.

Today was glorious, nearly 80 degrees. The rest of the week is going to be mostly rainy and in the 50s or 60s, but I appreciated the small glimpse of summer. I’m excited for farmers markets (I told Darren I’m going to eat my weight in strawberries and cream) and campfires and weekends at the lake. Soon… soon.
