Incredible and edible (just like your mom).

Victory is mine! Victory is mine. Great day in the morning, people, victory is mine…. I drink from the keg of glory. Bring me the finest muffins and bagels in all the land.

And on them  I will place poached eggs.

That’s right, I poached an egg LIKE AN ADULT. An adult who can poach eggs.

I was/am watching Julie & Julia for the hundredth time and during the part where Julie, who had never even eaten an egg, had to poach them, I decided I needed to give it a shot. Immediately.

I’ve poached eggs before, once, long long ago. In our high school Foods for Today class, one of the lessons involved making Eggs Benedict. Poached eggs and hollandaise sauce all in one go. Except to make the eggs, we had little molds that we put in the water for ease of poaching.

Well, I certainly don’t have one of those now. So I heated some water to just below simmering, threw in a little vinegar, swirled the water around the pot, and dropped an egg in the middle. And you know who managed to get it right on the first try? This guy.

And then I ate it.

Taking a cue from Smitten Kitchen, I speared the yolk with toast slices.

There will be Eggs Benedict in my near future. Oh yes.
